泰國打拋肉 Phat Kaphrao

●節目摘要:

說到泰國料理,台灣人再熟悉不過的就是「打拋肉 Phat Kaphrao/ Thai basil stir-fry」,鹹香四溢、帶點辣味,還有畫龍點睛的羅勒或是九層塔香氣。不過,最正宗的泰式打拋肉,使用的其實是叫作「聖羅勒」(holy basil, or bai kaphrao)的葉子,味道更為厚重獨特喔!泰式打拋肉是較為近代才出現的料理,其前身可能是中式料理香菜炒牛肉,由在泰國的華人廚師率先引進、販賣。二戰過後,泰式打拋肉漸漸成為泰國文化中重要的美食,和現在的口味不同,當時最主要的調味只有蠔油和魚露。儘管歷史較短暫,打拋肉卻是一道從前與現在、在泰國或他鄉都有些口味差異的多變料理!

Answer: 

Since I have never had the authentic taste, I would like my Phat Kaphrao with holy basil. This way, I’ll get to try the distinct aroma of holy basil and feel its difference from the flavour I’m used to.
